Red Pepper Mayonnaise

Rich and creamy, roasted red peppers give it that extra something. Great with any type of meats, cheeses, or veggies!

Ingredients

  • Mayonnaise (4 qts)
  • Pepper, Black - ground (2.5 ea)
  • Pepper, Red - roasted (2.5 lbs)
  • Salt, Kosher (2.5 lb)

Steps

  1. Clean black remnants off peppers under running water.
  2. Put peppers, salt and pepper in a 16 qt container.
  3. Add mayonnaise (use 75% estimate).
  4. Blend with large mixer.
  5. Fill up mixture with mayonnaise to 4 qts.
  6. Blend.

Notes

This is great in a squeeze tube, so consistency should be loose.
