Sesame Seared Tuna
Ahi tuna has a mild flavor that's also slightly sweet. It has a firm, meaty and buttery texture. Searing ahi tuna locks in the juices while maintaining the recommended doneness of rare to medium-rare.
Ingredients
- Tuna, Yellowfin (17 lbs)
- Pepper, White - ground (2 tbsp)
- Salt, Kosher (4 tbsp)
- Sesame Seeds, Black (.5 lb)
- Sesame Seeds, White (.5 lb)
Steps
- Trim off the blood line and flap from the meat.
- Cut into smaller pieces, approximately 2 lbs in weight.
- Season with salt and pepper and roll in the sesame seeds.
- Sear off sides of the meat, cooking very rare, and chill quickly.
Notes
We cut the pieces into elongated cubes about 2" x 2" and 6" long. The point is keeping them square as possible. Sear until about 10% up is cooked, then roll to the next side. Repeat until four sides are done. The exposed edge cooks faster than in the middle...
