Saffron Couscous
Couscous is a type of pasta that's made from semolina wheat flour and water. The subtle nutty flavor of couscous makes it a versatile ingredient that can be combined with fruits, vegetables and meats to create an excellent main or side dish.
Ingredients
- Almond - sliced, toasted (4 oz)
- Cous Cous - dry (2 lb)
- Cranberry - dried (4 oz)
- Figs - dried, sliced (8 oz)
- Lemon - juiced (4 ea)
- Lemon - zested (2 ea)
- Oil, Extra Virgin Olive (1 cup)
- Parsley - chopped (1 bunch)
- Pepper, Black - ground (1 ea)
- Saffron (.1 oz)
- Salt, Kosher (2 ea)
- Tomatoes, Sun Dried - julienne (4 oz)
- Water (6 cup)
Steps
- Boil water with saffron.
- Pour over couscous, cover and let sit until couscous is cooked.
- Drain couscous and cool.
- Blend all ingredients.
- Adjust seasonings.
