Raspberry Chipotle & Maple

A perfect blend of raspberries and chipotle peppers, this smokey, sweet and spicy sauce makes meat, fish and fowl extraordinary!

Ingredients

  • Beef Stock (4 cups)
  • Brown Sugar (2 lbs)
  • Chipotle Puree (.25 cup)
  • Corn Starch (___)
  • Maple Syrup (.25 cup)
  • Pick a Pepper Sauce (1 cup)
  • Raspberries (10 lbs)
  • Red Wine (1 gal)
  • Roasted Garlic (1 cup)
  • Roasted Shallots (1 cup)

Steps

  1. Reduce shallots, garlic, and red wine by 1/2.
  2. Add stock and pick a pepper sauce and reduce by 1/3.
  3. Add sugar and raspberry blend strained through chinoise.
  4. Add chipotle & maple syrup, and thicken with corn starch.
  5. Strain through mesh strainer.

Notes

Do not add salt. If it gets too thick don't add any stock - add water to thin instead.
