Potato & Goat Cheese Croquettes

Ingredients
- Potato, Russet (5.25 lbs)
- Chervil - minced (1.6 oz)
- Pepper, White - ground (1.25 oz)
- Salt, Kosher (2 oz)
- Butter, Unsalted (4 oz)
- Chevre Goat Cheese (1.5 lbs)
- Egg - mixed in (13 ea)
- Eggs - breading batter (10 ea)
- Bread Crumbs, Japanese - panko (1 lb)
- Flour, All Purpose (1 lb)
Steps
- Bake potatoes in oven until soft. Approx 45-50 minutes at 400 degrees.
- Peel potatoes and mash with the butter and goat cheese.
- Whisk together 13 eggs and add to mashed potatoes and butter mix.
- Add minced chives.
- Season as needed.
- Scoop and portion into 4 ounce portions.
- Dip in flour, then eggs (breading batter), and then bread crumbs.
- Deep fry until golden brown.
