Potato & Goat Cheese Croquettes

Ingredients

  • Potato, Russet (5.25 lbs)
  • Chervil - minced (1.6 oz)
  • Pepper, White - ground (1.25 oz)
  • Salt, Kosher (2 oz)
  • Butter, Unsalted (4 oz)
  • Chevre Goat Cheese (1.5 lbs)
  • Egg - mixed in (13 ea)
  • Eggs - breading batter (10 ea)
  • Bread Crumbs, Japanese - panko (1 lb)
  • Flour, All Purpose (1 lb)

Steps

  1. Bake potatoes in oven until soft. Approx 45-50 minutes at 400 degrees.
  2. Peel potatoes and mash with the butter and goat cheese.
  3. Whisk together 13 eggs and add to mashed potatoes and butter mix.
  4. Add minced chives.
  5. Season as needed.
  6. Scoop and portion into 4 ounce portions.
  7. Dip in flour, then eggs (breading batter), and then bread crumbs.
  8. Deep fry until golden brown.
