Manchengo Stuffed Onions
Simple flavors - onion and cheese - that combine perfectly for an Italian dish that complements practically all main courses.
Ingredients
- Bread Crumbs, Panko - untoasted (18 oz)
- Butter, Unsalted (1 lb)
- Cheese, Asiago - grated (14 oz)
- Cheese, Jack - shredded (1 lb)
- Cheese, Manchego - shredded (7 oz)
- Cream, Sour (1 cup)
- Cumin - ground (4 tbsp)
- Onions, Yellow Jumbo (16 ea)
- Parsely - minced (.75 oz)
- Pepper, White - ground (1 oz)
- Salt, Kosher (1 oz)
- Sauce, Shriracha (.75 oz)
- Vinegar, Balsamic (4 tbsp)
Steps
- Place on a sheet tray in a 350'f oven for 1.25 hours.
- Scoop out all but 3 layers of the onion to make a bowl.
- Use a couple of large pieces to patch and seal the bottom of bowl, then chop the rest.
- Mix chopped onion with 1/2 parsley, cheeses, vinegar, sour cream, sriracha, seasonings.
- Stuff each onion with mixture.
- Melt butter and mix with bread crumbs. Cook until lightly browned.
- Add minced parsely.
- Cap each onion with the bread crumb mix.
- Bake at 400'f for 7-9 minutes.
