Halibut Ceviche
Halibut ceviche is made with raw fish; however, the acid from the limes and lemons change the protein structure of the fish, basically “cooking” it without using heat.
Ingredients
- Halibut - Fillets (12 lbs)
- Cucumber, Hot House (6 ea)
- Onion, Red (3 ea)
- Pepper, Jalapeno (6 ea)
- Cilantro (2 bunch)
- Salt & Pepper (2 ea)
- Oil (3 oz)
- Lime Juice (16 oz)
Steps
- Clean and dice halibut, salt and cover in lime juice.
- Small dice onion, cucumber, and jalapeno.
- Chop cilantro.
- Mix everything with the halibut, and let sit covered in the refrigerator for 30 minutes.
- Drain juice, and add a little oil.
