Halibut Ceviche

Halibut ceviche is made with raw fish; however, the acid from the limes and lemons change the protein structure of the fish, basically “cooking” it without using heat.

Ingredients

  • Halibut - Fillets (12 lbs)
  • Cucumber, Hot House (6 ea)
  • Onion, Red (3 ea)
  • Pepper, Jalapeno (6 ea)
  • Cilantro (2 bunch)
  • Salt & Pepper (2 ea)
  • Oil (3 oz)
  • Lime Juice (16 oz)

Steps

  1. Clean and dice halibut, salt and cover in lime juice.
  2. Small dice onion, cucumber, and jalapeno.
  3. Chop cilantro.
  4. Mix everything with the halibut, and let sit covered in the refrigerator for 30 minutes.
  5. Drain juice, and add a little oil.
