Grilled Vegetables

Couscous is a type of pasta that's made from semolina wheat flour and water. The subtle nutty flavor of couscous makes it a versatile ingredient that can be combined with fruits, vegetables and meats to create an excellent main or side dish.

Ingredients

  • Eggplant - 1/4" slice (4 lbs)
  • Oil, 75/25 (1 cup)
  • Onion, Red - 1/4" slice (5 lbs)
  • Pepper, Red - seeded, cored and quartered (4 lbs)
  • Pepper, Yellow - seeded, cored and quartered (3 lbs)
  • Salt, Kosher (.01 lb)
  • Zucchini Squash, Yellow - 1/4" slice (3 lbs)
  • Zucchini, Green - 1/4" slice (3 lbs)

Steps

  1. Toss the vegetables in the oil and season with salt and pepper.
  2. Grill on both sides until fully cooked.
  3. Let cool.
