Grilled Fennel with Pine Nuts

Ingredients

  • Currants, Black - dried (1 lb)
  • Fennel Bulbs (10 lbs)
  • Nuts, Pine (1 lb)
  • Oil, Extra Virgin Olive (4 fl oz)
  • Pepper, Black - whole (1 tsp)
  • Salt, Kosher (1 oz)
  • Tarragon Vinaigrette Dressing (1 pt)

Steps

  1. Cut fennel into wedges.
  2. Toss with olive oil, salt and pepper.
  3. Mark on the grill and finish in the oven.
  4. Mix with the rest of the ingredients.
