Grilled Chicken Breast with Dried Fruit & Nuts

Ingredients

  • Grilled Chicken - julienne (15 lbs)
  • Endive, Belgian - julienne (1 lb)
  • Chervil - minced (.25 lb)
  • Parsley - minced (2 bunch)
  • Brown Sugar (8 oz)
  • Oil, 75/25 (2 cups)
  • Oil, Extra Virgin Olive (1 cup)
  • Pistachios - whole, toasted (1 lb)
  • Apricots - dried, julienne (.5 lb)
  • Cranberries - dried, sweetened (.5 lb)
  • Grapefruit - zested and juiced (2 ea)
  • Peach - dried, julienne (.5 lb)
  • Dijon Mustard (2 oz)

Steps

  1. Cut the chicken on a bias - 1/2" thick.
  2. Toast the pistachios.
  3. Add all the dried fruit, and herbs.
  4. Dressing - mix the grapefruit zest and juice, brown sugar, both oils, and mustard.
  5. Toss all ingredients.
  6. Adjust seasoning as needed.
