Grilled Chicken Breast with Dried Fruit & Nuts
Ingredients
- Grilled Chicken - julienne (15 lbs)
- Endive, Belgian - julienne (1 lb)
- Chervil - minced (.25 lb)
- Parsley - minced (2 bunch)
- Brown Sugar (8 oz)
- Oil, 75/25 (2 cups)
- Oil, Extra Virgin Olive (1 cup)
- Pistachios - whole, toasted (1 lb)
- Apricots - dried, julienne (.5 lb)
- Cranberries - dried, sweetened (.5 lb)
- Grapefruit - zested and juiced (2 ea)
- Peach - dried, julienne (.5 lb)
- Dijon Mustard (2 oz)
Steps
- Cut the chicken on a bias - 1/2" thick.
- Toast the pistachios.
- Add all the dried fruit, and herbs.
- Dressing - mix the grapefruit zest and juice, brown sugar, both oils, and mustard.
- Toss all ingredients.
- Adjust seasoning as needed.
