Frozen Butter Biscuits

Ingredients

  • Rosemary - chopped (1 tbsp)
  • Baking Powder (2 tbsp)
  • Salt and Pepper (1 ea)
  • Salt, Kosher (2 tsp)
  • Butter - frozen (1 cup)
  • Milk (1.5 cups)
  • Flour, All Purpose (4 cups)

Steps

  1. Whisk the flour, baking powder, salt, and rosemary.
  2. Shred the frozen butter directly into the dry ingredients.
  3. Toss gently with fingers to evenly distribute the butter.
  4. Add milk and stir with upside down wooden spoon.
  5. Fold the dough over a few times with your hands until all ingredients come together.
  6. Pat the dough out on a lightly floured cutting board.
  7. Cut with a small cutter - 2" (dip in flour to avoid sticking).
  8. Position on a baking sheet and sprinkle with course salt and pepper.
  9. Bake until they are golden brown (15 minutes at 400 degrees).

Notes

If necessary in step 5, add a bit more milk to gather up stray flour. This kneading will strengthen the dough a bit, but not enough to toughen up the biscuits. It will also help them form a crisp crust when they bake.
