Edamame Salad

Edamame are young soybeans harvested before they ripen or harden. Available shelled, in the pod, fresh, or frozen, they are a popular, plant-based food that may have various health benefits. Edamame beans are naturally gluten-free and low in calories. They contain no cholesterol and provide protein, iron, and calcium.

Ingredients

  • Edamame Beans (1 lb)
  • Mushrooms, Shiitake - sliced (1 lb)
  • Oil, 75/25 (1 lb)
  • Onion, Green - minced (1 lb)
  • Pepper, Red Bell - diced (1 lb)
  • Pepper, Yellow Bell - diced (1 lb)
  • Sesame Seeds, Black (1 lb)
  • Sesame Seeds, White (1 lb)

Steps

  1. Toss sliced mushrooms in oil, and sprinkle with sesame seeds.
  2. Bake at 350'f until mushrooms cooked and seeds toasted.
  3. Toss mushrooms with remaining ingredients, except the dressing (ship separately).
  4. Prior to serving/displaying, toss the dressing with 2 oz dressing to 1 lb salad.
  5. Adjust seasoning with salt and pepper as needed.
