Coconut Prawns
Coconut Shrimp is a dish made by "breading" shrimp with dried coconut instead of breadcrumbs. This gives the fried shrimp a lasting crispy texture and the sweet tropical flavor of coconuts. It's usually served with a sweet and spicy sauce to dip the shrimp in.
Ingredients
- Beer Batter (1 ea)
- Coconut / Panko Mix (1 ea)
- Kosher Salt (2 tbs)
- Lemon (1/4 round) (2 ea)
- Tiger Prawns - 16/20 (5 oz)
- Water (2 gal)
Steps
- De vain and butterfly prawns.
- Bring water, salt, and lemon to a boil, then remove from stove.
- Place in ice bath for cooling before adding prawns.
- Add prawns and blanch cook 3/4 of the way.
- Remove prawns from ice bath and press dry in a clean towel. Semi flatten, but don't crush.
- Dip formed prawn into batter until fully coated.
- Coat with the coconut/panko mix.
- Deep fry 6 prawns per order.
