Bleu Cheese Dressing

Blue cheese dressing is a popular side sauce, salad dressing and dip in the United States.

Ingredients

  • A-1 Sauce (1 btl)
  • Black Pepper (1 c-cup)
  • Bleu Cheese (12 lbs)
  • Cottonseed Oil (2.5 gal)
  • Dry Mustard Firmly Packed (1 c-cup)
  • Garlic Powder (1 tbsp)
  • Italian Seasoning (1 tbsp)
  • Ketchup (___)
  • Red Wine Vinegar (.5 gal)
  • Salt (1 c-cup)
  • Water (2 cups)
  • Worcestershire Sauce (10 oz)

    Steps

    1. Mix Salt, A-1, Garlic Powder, Italian Seasoning, Ground Black Pepper, Dry Mustard, and Worcestershire.
    2. Place 2 cups of water in a Roux container and fill to line with ketchup.
    3. Add to mixing bowl, and add crumbled bleu cheese.
    4. Start mixer on low speed with whip attachment for 4 minutes.
    5. Increase speed to medium and add cottonseed oil over 25 minutes (1/2 gal every 5 minutes).
    6. Add Red Wine Vinegar and mix for 5 minutes.
