Balsamic Onions

You can caramelize any kind of onion, but yellow or Spanish onions tend to offer the most balanced-sweet-savory flavor profile and are the most versatile for different dishes. Sweet onions, such as Vidalia or Walla Walla work too, but keep in mind that their flavor will become even sweeter once caramelized.

Ingredients

  • Oil, 75/25 (1 pt)
  • Onion, Red - whole, julienne (25 lbs)
  • Pepper, Black - ground (5 ea)
  • Salt, Kosher (5 ea)
  • Sugar, Brown (2 cups)
  • Vinegar, Balsamic - Italy (2 qts)

Steps

  1. Peel and julienne the onions.
  2. Heat oil in a deep pan.
  3. Add onion and brown them.
  4. Add balsamic vinegar and cook until reduced.
  5. Add brown sugar and mix well for a couple minutes.
  6. Let cool, then portion.
